Strawberry Soup Serves 4-6
Combine strawberries, vinegar, sugar and salt in bowl. Refrigerate one hour, stirring every 15 min. Puree in blender. Serve garnished w mint and a dollop of crème fraiche

Vinegar 0.25 c white wine
Salt, Kosher 2 tsp
Mint 0.25 c tightly packed, chiffonaded
