Starfruit Crisps

Slice starfruit about 1/8″ thick. Remove seeds. In a small saucepan, make a simple syrup of sugar, water, and lemon juice. Bring to a boil. Remove from heat and add sliced starfruit. Soak for 15 minutes. Place on a silicone sheet, sprinkle with sea salt, and bake at 200°F for 2.5 to 3 hours. Immediately place on a rack to cool. Cover tightly to store.
