Spiced Boca Nuts

Combine coconut, sugar, curry, cayenne, and salt in a large bowl. Whisk egg white in a separate bowl for 1 minute or until foamy. Stir nuts into egg white. Stir together coated nuts and coconut mix. Spread in a single layer on a greased jellyroll pan. Bake at 300°F for 25-30 minutes or until golden. Cool in the pan on a wire rack. Makes 4.5 cups.
