Prickly Pear Cactus
These are called nopales (cactus paddles) in Mexico. Put flat side down and scrape a knife almost horizontally from base to top. Dethorn on other side, then trim all around edge. Cut into 1/2″ cubes. Cook onion in veg oil, stirring until softened. Add cactus and salt and cook, stirring, until well coated w oil, about 1 min. Reduce heat to low and cook, covered, stirring occasionally, until cactus is crisp tender and has oozed liquid, about 5 min. Incease heat to moderate and cook, uncovered, stirring occasionally, until liquid is evaporated, 7-9 min.
