Crouton Dice w Blue Cheese

Preheat oven to 400 w rack in middle. Trim crusts from loaf, then cut into 1″ cubes. Put cubes in bowl and toss w butter. Arrange in I layer and bake, turning occasionally, until pale gold and crisp around the edges, but still soft inside, 12-20 min. Cool slightly in pan on rack, then poke a hole 3/4 of the way through each cube, using the large end of a chopstick, making a hole about 1/3″ in diameter. Press about 1/2 tsp of cheese into hole, mounding slightly. Just before serving, reheat croutons, cheese side up until warm and crisp, about 15 min (Note: can be baked and stuffed 1 day ahead and cooled completely, uncovered, then chilled, covered)
