Chicken, Coconut w Wild Rice Stew–Slow cooker
Put all ingredients except cilantro and lime in slow cooker and cook 4 hours on high or 7-8 hours on low. Shred chicken with two forks and return to slow cooker. Serve stew w cilantro and lime.
Carrots 4 medium, cut up
Ginger 2 T fresh
Chicken 1 1/2 lb skinless, boneless breasts
Butternut Squash 1 peeled, seeded, and cut up
Onion 1 diced
Celery 3/4 c diced
Rice 2/3 c
Curry 1 T
Fish Sauce 2 T
Brown Sugar 2 T
Coconut Milk 1 c lite
Chicken stock 4 c
Moroccan spice mix 1 T
cilantro 1 c fresh chopped
Limes 2 quartered
