Beef Jerky
Remove and discard all fat. Freeze steak until icy. Cut in very thin strips, cutting across the grain for crisp and with grain for chewy. Place strips in bowl or crock in 1/2″ thick layer. Sprinkle w salt, pepper, and liquid smoke. Repeat layers until all beef is used. Weight down w plate or heavy object; cover and refrigerate overnight. Drain and pat strips dry w paper towelling. Arrange strips on rack in shallow baking pan. Bake at 250 for 3.5-4 hours, til of desired doneness. Cool. Store in airtight plastic bags or jar w tight fitting lid in refrigerator until used. Makes 8-9 oz.
