Potato Baskets
Heavily grease 6 6oz custard cups. Mix potato sticks w whites. Press mix into cups as a lining and bake at 375 for 20-30 min. Slice potatoes 1/8 inch thick with slicer or mandoline. Arrange in skillet. Add water, salt and pepper. Dot top with butter. Cover with parchment buttered side down, and briskly simmer until most of the liquid has evaporated, 30-35 minutes. Serve sprinkled with parsley.
