Coconut, Grated Fresh

Preheat oven to 450. Place whole coconut in oven and bake 20 min. Pierce the 3 eyes of coconut w metal skewer or small screwdriver and drain liquid. Break open shell w hammer and remove flesh, levering it out carefully w point of a strong knife, small spatula or grapefruit knife. Using a vegetable peeler, take off thin crust of coconut. Transfer to baking sheet and let stand, uncovered, 30 min. Place in oven and bake until edges are golden, about 10 min. Cool and store in airtight container for up to 5 days or freeze.
