Brining

Best for home use is 7% salt (Kosher) (2/3 c per gallon of water). You can add 2/3 c brown sugar, wine, soy sauce, herbs and spices. With turkey, brine overnight, then remove and pat dry. Refrig uncovered for 6 hours or overnight. With pork, brine 2 days. Use eg. coriander seeds, juniper berries, peppercorns, fennel seeds, mustard seeds, bay leaves.

Mix together: 2 gallons cold water, 10 oz soy sauce, 1/2 c kosher salt, 1/2 c sugar, 2 T dried sage, 2 T celery seeds. 1 T dried thyme. Add 16-24 lb turkey and refrigerate 8 hours or overnight. inse well before cooking.
