Bring all ingredients to simmer to blend flavors; simmer about 30 min. Strain through cheesecloth, pressing solids w back of spoon to extract as much liquid as possible.

White wine 1 c, dry
Clam juice 24 oz
Water 3 c
Chile Pepper 1 dried
Bay Leaves 2 large
Thyme ½ tsp dried
Lemon juice 1 T FRESH
